Pasta Aglio E Olio
Friends have asked me for this recipe. It's very simple and easy. I was kinda shy to post the recipe, but since you guys asked for it, here it is. If I am not mistaken, "aglio e olio" is a common italian dressing which means "garlic and oil". So basically that is what the recipe is about. Just simple garlic and oil recipe with some additional items based on your tastebuds.
Ingredients:
1. Generous glugs of olive oil - as long as it is enough to cover the amount of pasta. I think it would be around 3/4 or 1 cup for a packet of pasta. Adjust the amount as you wish ok?
2. A packet of dry pasta of your choice (cook according to the packet's instruction) - i would recommend spaghetti, linguini as the oil will the cover the pasta pretty nicely, as they are thin.
3. 1/4 - 1/2 cup of chopped garlic (depends on how much you like the garlic)
4. 1/4-1/2 cup of chopped fresh chillies (depends on your taste as well)
5. Freshly ground black pepper - about 2 teaspoon (up to you really)
6. Salt to taste
7. Meat of your choice (optional) - i love to use seafood : squid, prawn, white flesh fish meat. chicken breast tasted nice as well, sliced nicely
8. Veggies of your choice (optional) - baby asparagus, brocolli tastes great with this (blanch in boiling) water first), capsicums (sliced thinly)
9. Parsley & parmesan cheese - as garnishing
How to:
Heat oil in the pan. Sautee the garlic, chillies. Then put in the meat (chicken cooks longer, so put chicken in chicken first. However, i like to cook chicken first with little oil salt & pepper, then take out and put them in later when you throw in the pasta). Add the pepper, and salt to taste.
Put in the pasta, veggies and the garnishing toss them around until the oil coated the pasta thoroughly. Put in the veggies and some parsley toss around. Put them in serving dish, sprinkle the balance parsley and put the parmesan, if you like.

p/s: a friend of mine asked me whether, instead of using pasta,we use other type of noodles. I never tried it before, but i think you can use the egg noddles, yellow noodle, probably also bee hoon and those kuey teow that you have to soak them first, like in thai dishes. Hmm i think it would be ok cuz they have this chewy texture.

Baby Corn Masak Lemak
Peria Stir Fry
Ikan Bawal (resepi mama)
Sotong Goreng Blackpepper (MyStyle)
5-7 ekor sotong (medium size)
2 tablespoons black pepper sauce. I use sos Pawada. (boleh tambah jika suka pedas)
1 tablespoon kicap
1 teaspoon sugar
a pinch of salt
bawang besar and cili merah (for garnish)
sedikit garam dan kunyit
3 tablespoon minyak
Cara2 nya:-
1- Bersihkan sotong dan sapukan sedikit garam dan kunyit.
2- Panaskan minyak dan gorengkan sotong for a while (lebih kurang 5mins).
3- Masukkan blackpepper sauce, kicap, gula dan garam.
4- Masukkan bawang besar yg dipotong cincin dan cili merah yang dislice.
5- Tuangkan sedikit air, bout 1/5 cup.
6- Let it simmer sampai kuah pekat.
7- Sedia untuk dihidangkan.

Sambal Sotong Berkacang
1. 2 ekor sotong kembang (boleh guna sotong kering jugak - yang sudah direndam)
2. 3 sudu besar Cili kisar
3. 3 sudu besar kacang tanah yang sudah ditumbuk kasar
4. 2 biji bawang besar - dikisar
5. 2 inci halia - dikisar
6. 4 ulas bawang putih - dikisar
7. Sedikit belacan - dalam setengah sudu besar ke..
8. Air asam jawa - dalam 3 sudu besar
9. Garam & gula
Cara-cara
1. Panaskan minyak dan masukkan bawang besar, bawang putih dan halia. Tumiskan sampai naik bau dan agak kering, dan masukkan cili kisar. Gorengkan sampai cili masak.
2. Masukkan belacan dan air asam jawa dan kacau rata
3. Masukkan sotong, kacang tumbuk, garam dan gula secukup rasa.
4. kacau rata dan biarkan sotong tu simmer atas api kecik dalam 15 minit ataupun sehingga dia lembut dan kuah pekat dan siap la!

Ikan Sweet Sour Tok
Bahan-bahan Ikan
1. Ikan bawal
2. Tepung jagung
3. Lada hitam yang ditumbuk
4. Garam
Bahan - bahan Sos
1. 3 ulas Bawang putih (cincang halus)
2. 1 inci Halia (cincang halus)
3. 2 biji tomato (potong dadu)
4. 2-3 sudu Tomato Sos
5. 1 sudu Cili kisar (cili boh)
6. Garam & Gula
Hiasan - timun yang di parut
Minyak untuk menumis dan menggoreng
Cara-cara
1. Mula-mula perapkan ikan dengan lada hitam, garam dan tepung jagung. Gorengkan ia sampai masak and agak garing. Ketepikan dalam pinggan untuk hidang
2. Untuk sos, tumiskan bawang putih n halia sehingga naik bau dan masukkan cili kisar. Tumiskan sampai agak garing dan masukkan sedikit air
3. Masukkan tomato buah yang didadukan and biarkan ia masak seketika
4. Masukkan tomato sos dan garam secukup rasa
5. Tambahkan gula untuk menaikkan rasa manis sos
6. Bancuhkan tepung jagung dengan sedikit air dan curahkan sedikit di dalam sos untuk memekatkannya
7. Tuangkan sos ke atas ikan yang sudah digoreng dan hiasankan di atas ikan dengan timun yang sudah diparut
Tom Yam Seafood
Ingredients
1. Bird eye chillies (cili padi) - depends on how spicy you want the dish to be
2. 2 medium sized onions (cut in wedges)
3. 2 tomatoes (wedges)
4. About 2 inches of galangal (lengkuas) - sliced thinly
5. 2-3 stalks of lemon grass (ketuk hujung dia)
6. Kaffir lime leaves (daun limau purut)
7. Seafood of choice , recommended - lala (clams), crab, squid and prawns
8. Veggies - to your preference but i like to use straw mushrooms
9. Thai sweet chilli paste (you can buy in supermarkets in bottles, tutup biru)
10. Nampla (fish sauce)
11. Lime (for the juice)
12. Chicken stock/ fish stock/ water oso can
13. Coriander (daun ketumbar) - chopped
Method
1. Throw in the onions, lemon grass and galagal into the stock/water and bring them to boil
2. Add about 3-4 tablespoons of the thai sweet chilli paste (i like to put more, more kawww!)
3. Add the tomatoes, chillies, and kaffir lime leaves and put some fish sauce for taste
4. Put in the seafood, mushrooms and then put some lime juice (how many really depends on how much stock/water). Usually for about 1 liter water, i use about 3-4 limes
5. Let it simmer for awhile and stir in the chopped coriander. Let me tell you, without coriander, it won't smell like tom yam... and now.. walla.. it's ready.
Easy Peasy Mashed Potatoes
Ikan Siakap Kukus
Chilli Crab (Chef Wan)
Ingredients
cooking oil for deep-frying + 2 tablespoons
1 1/2 kg crabs, halved
2 tablespoons cornflour (campurkan dgn 1/4 cup air)
1 egg, beaten.
spring onion, chopped.
(Finely ground paste)
1 1/2 tablespoons powdered chilli
6 red chillies
6 cloves garlic
100g shallots (3 ulas)
1 cm ginger
Sauce (blended)
3 tablespoons chili sauce
2 tablespoons sugar
2 tablespoon vinegar
1 cup canned tomato sauce
salt
Method:
1- Heat the oil and deep-fry the crabs until golden. Drain and set aside.
2- Heat 2 tablespoons oil and saute the finely ground paste until fragrant. Stir in the sauce ingredients and bring the mixture to a boil.
3- Cover and simmer for about 10 minutes.
4- Gradually ass the cornflour mixture and stir well.
5- Add the beaten egg.
6- Gently stir the fried crabs and simmer until the sauce is cooked.
7- Garnish with spring onion and serve immediately.

Nasi Goreng Ikan Bilis
1. 3 sudu besar cili kering yang diblend (cili boh pun boleh) - depends on suka pedas ke tak
2. 2 biji bawang besar (dikisar)
3. Ikan bilis segenggam - gorengkan dulu sampai garing
4. Sayuran of your choice (selalunya guna campuran sawi n kobis)
5. Telur (kalau nak)
6. Kicap manis
7. Garam secukup rasa
8. Nasi 2 pot
Cara - cara
1. Tumiskan bawang besar yang dikisar bersama dengan cili kering paste tu.
2. Agak2 dah masak dan garing, masukkan garam secukup rasa
3. Masukkan nasi... dan ikan bilis yang digoreng tadi
4. Kacau sehingga rata dan masukkan kicap sesedap rasa
5. Kalau nak telur, masukkan telur skrg dah gaulkan nasi
6. Masukkan sayuran dan kacau sekejap sahaja..

Instructions
Ayam Goreng Sri Wangi (Chef Wan)
4 chicken breast, skinned, boned and cut into strips
cooking oil for deep-frying + 1 tablespoon
2 batang serai (hiris halus)
1 bunga kantan (hiris halus)
5-10 biji cili padi (tambah jika suka pedas)
2 tablespoon tom yam paste
1/4 cawan air
1 tablespoon honey (kalau tak ada, gula pun boleh digunakan)
1 1/2 tablespoon mayonnaise
3 helai daun limau purut (hiris halus)
Bahan2 untuk marinade (blended)
1 1/2 tablespoon oyster sauce
garam
1 biji telur
3 tablespoon cornflour
Cara2 nya:
1- Marinade ayam bersama bahan2 untuk marinade selama 15minutes.
2- Kemudian digoreng sehingga golden brown.
3- Panaskan 1 tablespoon minyak.
4- Tumiskan serai, bungan kantan, cili padi dan paste tomyam until fragrant.
5- Masukkan air, honey dan ayam.
6- Gaulkan sehingga rata.
7- Padamkan api and masukkan mayonnaise dan daun limau purut.

Ayam Goreng Bakti
2 tablespoon cili boh (cili kering yg dikisar)
2 tablespoon bawang besar (yg dikisar)
1 tablespoon gula
1 pinch of salt
1/2 tablespoon cuka
garam dan kunyit untuk disapu pada ayam.
Minyak untuk menggoreng
Cara2 nya:
1- Gaulkan garam dan kunyit pada ayam.
2- Gorengkan ayam hingga masak/garing.
3- Panaskan 3 tablespoon minyak.
4- Tumiskan cili dan bawang sehingga wangi/garing.
5- Masukkan gula, garam dan cuka.
6- Lastly, masukkan ayam dan gaul hingga rata.
Ikan Kicap.
1/2 biji bawang besar (blend)
1cm halia
2 ulas bawang putih
1/2 cup kicap
3 tablespoon tomato sauce
1/2 tablespoon gula
1/4 teaspoon garam & kunyit (untuk disapukan pada ikan)
Cara2 nya:
1- Sapukan garam & kunyit pada ikan..
2- Gorengkan ikan sehingga masak/garing.
3- Masukkan 2 tablespoon minyak ke dalam kuali. (Minyak balance gorengikan tadi boleh digunakan)
4- Tumiskan bawang besar, halia dan bawang putih sehingga naik bau/garing.
5- Masukkan kicap, tomato sauce, gula dan garam.
6- Biarkan mendidih. (Leave it to boil)
7- Finally, masukkan ikan yg telah digoreng tadi.
8- Let it simmer for a while and ready untuk dihidangkan.
Ayam Goreng Mamak Style
1/2 tablespoon cili boh (cili kering dikisar)
1/4 teaspoon salt
1/4 teaspoon turmeric powder
2 tablespoon cornflour
Cara2nya:
1- Campurkan kesemua bahan2 dan sapukan pada ayam.
2- Gorengkan ayam. (If possible, deep fry)
Ayam Goreng Mix Herbs
3 tablespoon kicap
1 tablespoon sugar
1 teaspoon mix herbs
1/4 teaspoon salt
1/4 teaspoon pepper (optional)
Minyak untuk menggoreng.
Cara2nya:
1- Campurkan kesemua bahan2 dan sapukan pada ayam.
2- Marinade for about 30mins. (Kalau biarkan overnite, lagi best)
3- Gorengkan ayam. (If possible, deep fry)
