Tom Yam Seafood

One of my fave dish and this recipe i got from watching the Planet Food show, Thailand, but i added some ingredients on my own. Very easy but scrumptious result!!
Ingredients
1. Bird eye chillies (cili padi) - depends on how spicy you want the dish to be
2. 2 medium sized onions (cut in wedges)
3. 2 tomatoes (wedges)
4. About 2 inches of galangal (lengkuas) - sliced thinly
5. 2-3 stalks of lemon grass (ketuk hujung dia)
6. Kaffir lime leaves (daun limau purut)
7. Seafood of choice , recommended - lala (clams), crab, squid and prawns
8. Veggies - to your preference but i like to use straw mushrooms
9. Thai sweet chilli paste (you can buy in supermarkets in bottles, tutup biru)
10. Nampla (fish sauce)
11. Lime (for the juice)
12. Chicken stock/ fish stock/ water oso can
13. Coriander (daun ketumbar) - chopped

Method
1. Throw in the onions, lemon grass and galagal into the stock/water and bring them to boil
2. Add about 3-4 tablespoons of the thai sweet chilli paste (i like to put more, more kawww!)
3. Add the tomatoes, chillies, and kaffir lime leaves and put some fish sauce for taste
4. Put in the seafood, mushrooms and then put some lime juice (how many really depends on how much stock/water). Usually for about 1 liter water, i use about 3-4 limes
5. Let it simmer for awhile and stir in the chopped coriander. Let me tell you, without coriander, it won't smell like tom yam... and now.. walla.. it's ready.
